Easy Corn Chowder (Gluten-Free, Cozy for Fall and Ready in 30mins!)
This Easy Corn Chowder recipe is exactly what I make when I want a cozy meal without dealing with icy roads or a stressful trip to the shop! There is something truly magical about being tucked away in a cozy cabin out in Montana when the snow starts falling in massive, heavy flakes—you know that absolute perfect cabin-bound, snowed-in feeling? The roads were completely icy, and honestly, going out wasn’t happening, so I headed straight for the kitchen to whip up something comforting using simple pantry staples. I just threw together a bag of frozen corn from the freezer, some potatoes, chicken stock, and a package of bacon, and let me tell you, it came together so quickly and beautifully! It has that amazing smoky bacon depth, sweet corn, and a hint of garlic that makes the whole kitchen smell incredible.

Easy Gluten-Free Corn Chowder Cooking Tips
- The Frozen Shredded Cheese Trick: Keep your bags of pre-grated Parmesan and white cheddar in the freezer so they last months longer. Just squeeze the bag to loosen the shreds and pull out what you need. It will melt instantly the second it hits your piping-hot chowder.
- The “One-Pan” Bacon Fat Trick: If your bacon isn’t overly fatty, don’t worry about draining the pan or wiping it clean. Leave that beautiful, smoky bacon residue and fond right at the bottom of the pot to cook your veggies. It saves you from wasting extra cooking oil, cuts down on kitchen cleanup, and carries all that rich, smoky flavor directly into the base of your soup.
Cozy Corn Chowder Flavor Variations to Try
- Want a Smokier Flavor? Char the Corn: If you want to elevate the depth of this chowder, take your frozen or canned corn and spread it out in a dry cast-iron skillet over medium-high heat. Let the kernels blister and char slightly for a few minutes before tossing them into the soup.
- Smoky Southwestern Twist: To lean into that charred corn vibe, add a generous pinch of smoked paprika and a tiny dash of cumin to the pot when you sauté your garlic. It gives the chowder a gorgeous golden color and a subtle, warming kick.
How to Make This Easy Corn Chowder Step-by-Step
Step 1: Don’t wipe out the pot after cooking your bacon! Sautéing your chopped onion, carrots, and celery directly in that leftover bacon fat infuses the entire soup base with an incredible smoky depth.

Step 2: To build your rich chowder base, add the butter and flour directly into the sautéed veggies. Let it cook off for 1–2 minutes to eliminate any raw flour taste before adding your liquids.

Step 3: Pour in your chicken stock and aggressively scrape up all those delicious, flavor-packed browned bits stuck to the bottom of the pot. That residue is pure flavor gold. Fun Fact~ It’s called ‘fond’ which comes from a French word meaning base or bottom.

Step 4: Once the soup base is simmering, drop in your clean, cubed potatoes followed by your frozen corn.

Step 5: Finish the soup with a high pour of heavy cream to build that iconic, creamy chowder texture.

Step 6: Turn the heat down low and toss your frozen pre-shredded white cheddar and parmesan cheese right on top of the hot soup, stirring gently until it melts into pure silky perfection.

Step 7: Garnish with crispy bacon bits and chopped green onions then serve warm!
